Clotted Cream

Spring is slowly eeking it's way here into Minnesota...very slowly.  Most other places in the good ole' U.S. of A. gardens are already producing lettuce and radishes, strawberries are ripening...it is a great time to think about eating fresh fruits and veggies!

One of our favorite meals is a conglomeration of veggies (such as red pepper, zucchini, mushrooms, and tomatoes) piled onto whole wheat with Roasted Red Pepper Hummus on one side and spicy brown mustard on the other...YUM!  Of course for dessert an array of fresh berries with freshly whipped cream is magnificent!

Easy Clotted Cream

Ingredients

  • 1 cup heavy cream
  • 1/3 cup sour cream
  • 1 tablespoon confectioners' sugar

Directions

  1. Using a whisk attachment on the mixer, whip heavy cream until stiff peaks form. Remove from mixer, and hand whisk in the sour cream and confectioners' sugar until just combined. Store in refrigerator.

wow i didnt know you could make your own clotted cream! sounds great esp sinc ei just saw strawberries in the farmers market!

This looks lovely with the fresh fruit. I've never made clotted cream but it looks delicious.

YUM! My hubby makes fresh whipped cream too. That looks delish, and your meal sounds fabulous! Do you put it over whole wheat bread, pasta, or something else?

Tree-the veggie sandwhiches, we usually just put that right on whole wheat and eat it raw...SO yummy! :)
